Hey! This soup is apparently heaven in a bowl according to my wonderful mother. You be the judge!

It's also from Panera. So automatic yum.

Ingredients

- 2 tbsp of butter

- 1 medium onion, chopped

- 1/2 cup of butter

- 2 cups of milk

- 2 cups of half and half

- 1/2 cups of flour

- 4 cups of chicken broth

- 1 lb fresh broccoli, florets only

- 2 cups of baby carrots, chopped

- 1/2 tsp of nutmeg

- 4 cups of grated cheddar cheese

- Salt and pepper to taste

What To Do:

1. Saute the onion in the 2 tbsp of butter and set aside.

2. In a sauce pan, melt the 1/2 cup of butter and whisk in the flour.

3. Gradually add the half and half and milk to the butter/flour mixture.

4. Whisk together until thickened

5. Add the milk/butter/flour mixture to the onions and then add the chicken broth.

6. Add the broccoli and carrots and simmer over medium low heat for 20-25 minutes or until the brocooli is tender.

7. Puree the mixture with an immersion blender or a stand up blender

8. Stir in the cheese and nutmeg.

9. Add salt and pepper to taste

Enjoy :)
